A few years ago, the concept of zero-waste shopping attracted a lot of attention. The earthy feel of wooden shelves lined with pasta and rice offered a different kind of shopping experience, one that was slow and sensory. It was aesthetic too, and there was something quite satisfying about rows of thoughtfully arranged glass jars each containing assortments of nuts, grains, and seeds. Most of all, it was personal; walk-in customers would be greeted by a staff member all too keen to explain what the whole thing was about.
