Padraic O’Kane is sitting in The Cove, a 14-seat underground private dining space within his newly refurbished Sole Seafood & Grill eatery on Drury Street. The restaurateur has invested €4.5 million into the expansion of the Dublin staple, almost doubling its capacity to 200 seats and adding new kitchens and staff facilities.
