Padraic O’Kane is sitting in The Cove, a 14-seat underground private dining space within his newly refurbished Sole Seafood & Grill eatery on Drury Street. The restaurateur has invested €4.5 million into the expansion of the Dublin staple, almost doubling its capacity to 200 seats and adding new kitchens and staff facilities. For O’Kane and his business partner, Larry Murrin, the CEO of Dawn Farms, the investment is expected to start demonstrating returns quite quickly.
