Vegan Sandwich Company is seeking a restructuring of its debts under the new examinership process for small and micro companies. Founded by Sam Pearson in 2019, the business had three premises around Dublin, in Smithfield, St Stephen’s Green and until last week, in the Swan Centre, Rathmines. It also has a range of “grab-and-go” meat substitutes, which are available in more than one hundred retailers nationwide across SuperValu, Fresh and Nourish stores.
