There are 72 stone steps leading to the entrance of the Philadelphia Museum of Art – famously known as the “Rocky Steps” thanks to the Rocky films.  I’ve just jogged up and down them with Rob Walsh, founder of Spud. Walsh is warm, engaging company: self-deprecating, quick to laugh, and fully committed to the moment – even humming “Eye of the Tiger” on the climb. Philadelphia may be a long way from his home turf in Wicklow, but he carries himself with the curiosity of a tour guide eager to uncover every story, and the drive of someone still hungry…
