Just one year ago, The Clermont re-opened after extensive refurbishment on the waterfront of Blackrock, a pretty seaside suburban village on the outskirts of Dundalk. The gastro-pub’s menu highlights the quality of its beef sourced from Bellingham Farms, a short drive away in rural Co Louth.  The establishment offers private dining in The Chairman’s Room, a booking-only area themed as “a celebration of 65 years dedicated to farming, food production and taking on the world from the smallest county in Ireland”.
